PHASE 3

RESTORATION & LAUNCH OF HEALTH FOOD CAFE:

"Le Petit-Pressoir", Old Town, Préverenges

 

This charming 18th Century Pressoir is both a landmark & classed as a historic building in Switzerland. While living here we had the privilege of hearing many times from passers by that it was a veritable haven of peace. Although we of course enjoyed these generous exchanges over the garden fence, we began to realise that it would be even better if we could share the space with the local community. How much enjoyment can one really derive from a beauty that cannot be shared? In view of our passion for health foods described in Phase 2, the idea was sown to create a health food café. Given the terrace, the garden & the proximity to Préverenges beach, the location would be ideal in summer. While in winter the old stone walls, wooden beams & large wood burning stove would make it a magically cosy place to take shelter from the elements !

 

As far as the menu is concerned, our mission is to demonstrate that a healthy, ethical meal, can still taste delicious without being too complex. The menu would be simple, but vital, made with fresh local organic produce. Our goal would be to avoid all those harmful hidden ingredients such as glutamate, cheap vegetable oils from genetically modified crops & excessive use of salt, sugar (& its derivatives), in addition to preservatives.

 

The emphasis will be placed on raw foods, & creative vegetarian alternatives to those much-loved meaty plates we all know. While the Café wont be exclusively vegetarian, it will again emphasize healthier animal proteins such as fish or white meat which would be sourced ethically. Gluten & dairy products would be kept to a strict minimum demonstrating the vast array of healthier alternatives without impacting on flavor.

 

For the time being the project is still hypothetical. Approval to convert this residential property into a commercial one hangs on the current plans for the development of the neighborhood.
